Souvlaki Shiitake Pizza

Souvlaki Shiitake Pizza on Pita or Flatbread

This is fun little recipe that takes very little prep time.  It's filling and yet light. It's super flavourful, and yet can be augmented with other flavours to make variations on the theme. 

Add flavours like sumac, paprika, cayene, or try with NL Organics Pear Mint.  Try substituting the tomatoes with sweet fruit or sundried tomatoes. 

Use different breads, or even tortillas, and try different levels of pre-cooking of your toppings, but always cook any mushrooms you eat.... don't eat mushrooms raw.

You can also try this recipe with a different type of mushroom from our great selection, like lion's mane, or maitake.

 

Shiitake Souvlaki Marinade:

2 tablespoons olive oil

1 tablespoon dried or 3 tablespoons fresh oregano

2 teaspoons freshly squeezed lemon juice

About a 1/2 teaspoon sea salt (or to taste)

200g Shiitake Mushrooms from Newfoundland Gourmet Mushroom Co.

(2 Packages NF Gourmet Shiitake Mushrooms)

Mix olive oil, oregano, lemon juice and salt in a medium sized bowl.

Add shiitake mushrooms to marinade and let sit for 20-60 minutes (or even longer).

Cook the Shiitake lightly with remaining marinade.

Set aside to cool a little and to let marinade drain off.


1/3 cup tzatziki sauce

(Donair Sauce is good too)

 

Tzatziki:

1 cup shredded English cuke

2 teaspoon sea salt (or to taste)

1 cup Greek yogurt

2-4 cloves NL Organics garlic, chop finely

1 tablespoon lemon juice

2 tablespoons fresh NL Organics dill, chop finely

2 tablespoons fresh NL Organics mint, chop finely

Put cucumber in a strainer or colander, sprinkle with salt and mix evenly.  Leave to brine for 30 minutes.

Get as much water out of the cucumber as possible.

Add salted cucumbers, yogurt, garlic, lemon juice, dill, and mint to a mixing bowl and stir. Keep cold until your shiitake souvlaki pita pizza’s are out of the oven or off the bbq and ready to serve.

The Pita Pizzas:

You'll need 3-4 Pita's (9” Flatbread Pitas)

1 tablespoon olive oil

500g feta

1/4 cup diced red onion,

2 medium sized sweet tomatoes, diced

1/3 cup English cuke, diced

Brush pitas with olive oil and spread with most of the feta

Add souvlaki shiitake, onions, and tomatoes.

Bake, grill, or BBQ until lightly toasted, or until tomatoes and onion soften  (ideally the pita is still soft)

Remove from heat, and pizza from the oven, top with remaining feta and diced cucumber.

Drizzle with your delicious tzatziki sauce.
